Chicken Liver Carinderia Style

Spicy Chicken Liver in soy sauce and ketchup. Yes, ketchup. That’s what’s in those spicy, salty, sweet chicken liver from carinderias or at least the ones I know. 

2 cloves garlic, minced
1 onion, chopped
1/2 kl chicken liver
1/2 cup water
1/2 cp soy sauce
5 tbsp ketchup
1 tbsp calamansi juice
salt and pepper to taste
red chilis optional


Sauté minced garlic and onion. Add chicken liver and allow to render flavor. Pour water and bring to boil. Soysauce and a tsp of calamansi juice, next. Simmer. Add chillies and about 5 tbsps of ketchup. Salt and pepper to taste. Simmer until sauce thickens a bit.

Don’t use vinegar or else it will taste like weird sweet adobo. Make sure to use calamansi instead.
