Eggplant with Chili Garlic Sauce

This recipe is a Filipino take on the Chinese Eggplant with Chili Garlic Sauce. Serve this with your favorite fried, steamed or stewed dishes.

  • 4 medium sized eggplants
  • 3 tbsp chili garlic paste
  • 1 tbsp soy sauce
  • 2 tbsp banana catsup


  • Cut eggplants in half, and soak in water with vinegar for 1 minute.
  • Drain eggplants and fry.
  • Remove eggplants from the frying pan and let cool.
  • Slice eggplants vertically into 4 pieces.
  • In another frying pan, heat a tbsp of oil and add the chili garlic paste.
  • Add the fried eggplants, stir fry for 30 seconds to coat the eggplants with the chili garlic paste.
  • Add soy sauce and catsup. Stir fry for another 30 seconds and serve.
