Eggplant with Chili Garlic Sauce
This recipe is a Filipino take on the Chinese Eggplant with Chili Garlic Sauce. Serve this with your favorite fried, steamed or stewed dishes.

- 4 medium sized eggplants
- 3 tbsp chili garlic paste
- 1 tbsp soy sauce
- 2 tbsp banana catsup
Cut eggplants in half, and soak in water with vinegar for 1 minute.
Drain eggplants and fry.
Remove eggplants from the frying pan and let cool.
Slice eggplants vertically into 4 pieces.
In another frying pan, heat a tbsp of oil and add the chili garlic paste.
Add the fried eggplants, stir fry for 30 seconds to coat the eggplants with the chili garlic paste.
Add soy sauce and catsup. Stir fry for another 30 seconds and serve.
